Description

Delicious and nutritious muffins that combine the flavors of cinnamon rolls with the protein boost of protein powder, perfect for a healthy breakfast or snack.


Ingredients

  • 1 cup oat flour
  • 1/2 cup protein powder
  • 1/4 cup coconut sugar
  • 1 tablespoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1 cup unsweetened applesauce
  • 2 large eggs
  • 1/2 cup almond milk
  • 1/2 teaspoon vanilla extract
  • Optional: cream cheese for glazing

Instructions

  1. Preheat your oven to 350°F (175°C) and line your muffin tin with paper liners.
  2. Combine the oat flour, protein powder, coconut sugar, baking powder, cinnamon, and salt in a large mixing bowl.
  3. Whisk together the applesauce, eggs, almond milk, and vanilla extract in another bowl.
  4. Pour the wet mixture into the dry ingredients, gently stirring until just combined.
  5. Divide the batter evenly among the muffin cups, filling each about three-quarters full.
  6. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  7. Allow the muffins to cool slightly in the tin before transferring them to a wire rack.
  8. Drizzle with cream cheese glaze if desired before serving.

Notes

These muffins can be prepared ahead of time and freeze beautifully for later enjoyment. Customize by adding nuts, dried fruits, or chocolate chips as desired.
