Description

Deliciously wholesome bites combining creamy cottage cheese and sweet apples with a hint of cinnamon, perfect for breakfast or a snack.


Ingredients

  • 1 cup cottage cheese
  • 1 cup rolled oats
  • 1/2 cup applesauce or 1 small grated apple
  • 1 large egg
  • 1/2 tsp cinnamon
  • 1 tbsp honey or maple syrup (optional)
  • 1/2 tsp baking powder
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a mini muffin pan.
  2. Combine the cottage cheese, oats, applesauce (or grated apple), egg, cinnamon, honey or maple syrup, baking powder, and salt in a large mixing bowl.
  3. Mix everything well until it reaches a thick, dough-like consistency.
  4. Allow the mixture to rest for about 5 minutes.
  5. Scoop the mixture evenly into the mini muffin pan, filling each cup almost to the top.
  6. Bake for 18–20 minutes until golden.
  7. Cool in the pan for a few minutes before transferring to a wire rack.

Notes

These bites can be made ahead of time and stored in an airtight container. They can also be frozen for up to two months.
