Description

A vibrant and flavorful stir-fry with tender chicken and fresh vegetables, perfect for quick weeknight dinners or impressing guests.

Ingredients

Scale
  • 1 lb chicken breast, sliced
  • 2 cups mixed vegetables (bell peppers, broccoli, carrots)
  • 2 tablespoons soy sauce
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, minced
  • Salt and pepper to taste
  • Cooked rice or noodles for serving

Instructions

  1. Heat the olive oil in a large pan or wok over medium-high heat.
  2. Add the minced garlic and ginger to the pan and sauté for about 30 seconds until fragrant.
  3. Toss in the sliced chicken, cooking until golden brown (about 5-7 minutes).
  4. Add your mixed vegetables to the pan and stir-fry for about 3-4 minutes until tender-crisp.
  5. Pour in the soy sauce, stirring to coat the chicken and vegetables.
  6. Season with salt and pepper to taste.
  7. Serve the stir-fry over warm rice or noodles.

Notes

Make-ahead tips: Slice the chicken and chop the vegetables in advance. For a quicker option, consider air frying the chicken.
