- 4 slices fresh mozzarella cheese
- 4 slices of ciabatta or bread of choice

Instructions
- Season the chicken breasts with salt and pepper, ensuring each side is well-coated.
- Heat olive oil in a skillet over medium heat, allowing it to shimmer before adding the chicken.
- Add the chicken breasts and cook until golden brown and cooked through, about 6-7 minutes per side.
- Remove the chicken from the skillet and let it rest for a few minutes before slicing.
- Toast the ciabatta slices in the same skillet until golden.
- Spread pesto on one side of each toasted bread slice.
- Layer sliced chicken and mozzarella cheese on the pesto side.
- Top with fresh basil leaves if desired.
- Close the sandwich and serve warm.
Notes
Use homemade pesto for extra flavor, or substitute with sun-dried tomato pesto for variety. Allow chicken to rest before slicing for juiciness.
