Description

A delectable Chicken Pesto Sandwich featuring tender chicken, creamy pesto, and gooey mozzarella on crispy ciabatta bread.


Ingredients

  • 2 boneless, skinless chicken breasts
  • 1/4 cup pesto
  • 4 slices fresh mozzarella cheese
  • 4 slices of ciabatta or bread of choice
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh basil leaves (optional)

Instructions

  1. Season the chicken breasts with salt and pepper, ensuring each side is well-coated.
  2. Heat olive oil in a skillet over medium heat, allowing it to shimmer before adding the chicken.
  3. Add the chicken breasts and cook until golden brown and cooked through, about 6-7 minutes per side.
  4. Remove the chicken from the skillet and let it rest for a few minutes before slicing.
  5. Toast the ciabatta slices in the same skillet until golden.
  6. Spread pesto on one side of each toasted bread slice.
  7. Layer sliced chicken and mozzarella cheese on the pesto side.
  8. Top with fresh basil leaves if desired.
  9. Close the sandwich and serve warm.

Notes

Use homemade pesto for extra flavor, or substitute with sun-dried tomato pesto for variety. Allow chicken to rest before slicing for juiciness.
