Description

A bright and refreshing salad featuring fluffy quinoa, sweet-tart cherries, and crunchy pistachios, complemented by fresh mint and a tangy apple cider vinegar dressing.


Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1 cup fresh cherries, halved
  • 1/2 cup pistachios, chopped
  • 1/4 cup fresh mint leaves, chopped
  • 1/4 cup apple cider vinegar
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Rinse the quinoa under cold water for about 2 minutes.
  2. Combine the rinsed quinoa and water in a medium saucepan, bringing them to a gentle boil.
  3. Reduce the heat to low, covering the pot and allowing it to simmer for 15 minutes.
  4. Fluff the quinoa with a fork and let it cool.
  5. Combine the cooled quinoa, halved cherries, chopped pistachios, and fresh mint leaves in a large mixing bowl.
  6. Whisk together the apple cider vinegar, olive oil, salt, and pepper in a smaller bowl until smooth.
  7. Pour the dressing over the quinoa mixture, tossing gently to coat.
  8. Serve the salad chilled or at room temperature.

For best flavor, prepare the quinoa a day ahead and keep the components separate until ready to serve. Consider using a cherry pitter for efficiency when preparing cherries.
