Description

A delicious pasta-free dish that combines layers of zucchini, marinara sauce, and gooey cheese, resulting in a comforting and nostalgic casserole.


Ingredients

  • 2 medium zucchinis, sliced
  • 1 cup mozzarella cheese, shredded
  • 1 cup marinara or tomato sauce
  • ½ cup Parmesan cheese, grated
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Olive oil for greasing
  • Optional toppings: Pepperoni, olives, or sautéed mushrooms

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Grease a 9×13-inch baking dish lightly with olive oil.
  3. Layer the sliced zucchini in the baking dish evenly.
  4. Pour marinara sauce over the zucchini, then sprinkle with Italian seasoning, salt, and pepper.
  5. Spread mozzarella cheese evenly over the sauce.
  6. Top with the grated Parmesan cheese.
  7. If using, add your optional toppings.
  8. Bake for 25-30 minutes until the cheese is golden and bubbling.
