- 1 cup nut butter (peanut, almond, or cashew)
- 1/2 cup honey or maple syrup
- 1/2 cup chocolate chips or dried fruit
- 1/4 cup shredded coconut (optional)
- 1 teaspoon vanilla extract
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C).
- Mix together the rolled oats, nut butter, honey (or maple syrup), and vanilla extract in a large bowl.
- Fold in the chocolate chips (or dried fruit), shredded coconut, cinnamon, and salt until combined.
- Drop tablespoon-sized portions of dough onto a lined baking sheet, spacing them about two inches apart.
- Bake for 10-12 minutes or until the edges are golden brown.
- Allow them to cool on the baking sheet for a few minutes before transferring to a wire rack.
Notes
You can make the dough a day in advance and bake fresh cookies in the morning.
