Description

Nutritious and delicious breakfast cookies packed with oats, nut butter, and chocolate chips or dried fruit, perfect for starting your day with a wholesome treat.


Ingredients

  • 2 cups rolled oats
  • 1 cup nut butter (peanut, almond, or cashew)
  • 1/2 cup honey or maple syrup
  • 1/2 cup chocolate chips or dried fruit
  • 1/4 cup shredded coconut (optional)
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mix together the rolled oats, nut butter, honey (or maple syrup), and vanilla extract in a large bowl.
  3. Fold in the chocolate chips (or dried fruit), shredded coconut, cinnamon, and salt until combined.
  4. Drop tablespoon-sized portions of dough onto a lined baking sheet, spacing them about two inches apart.
  5. Bake for 10-12 minutes or until the edges are golden brown.
  6. Allow them to cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

You can make the dough a day in advance and bake fresh cookies in the morning.
