Description

Delicious and fluffy muffins filled with mixed berries and a creamy cream cheese surprise.


Ingredients

  • 1 ½ cups all-purpose flour
  • ½ cup sugar
  • 2 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • ½ cup cream cheese, softened
  • 1 large egg
  • ½ cup milk
  • ½ cup unsalted butter, melted
  • 1 cup mixed berries (blueberries, raspberries, strawberries)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Whisk together the flour, sugar, baking powder, baking soda, and salt until well combined.
  3. Mix the softened cream cheese, egg, milk, and melted butter in another bowl until smooth.
  4. Pour the wet ingredients into the dry ingredients, stirring gently until just combined.
  5. Fold in the mixed berries, ensuring they are evenly distributed.
  6. Divide the batter evenly among the muffin cups, filling each about ¾ full.
  7. Bake for 18-20 minutes or until a toothpick inserted comes out clean.
  8. Allow to cool in the pan before transferring to a wire rack.
