- 2 medium Sweet Potatoes, diced
- 2 cups Cooked Chicken, shredded
- 1/2 cup BBQ Sauce
- 1 Red Onion, sliced
- 1 cup Corn, fresh or frozen
- 1 cup Cheddar Cheese, shredded
- 2 tablespoons Olive Oil
- Salt, to taste
- Black Pepper, to taste
- 1 teaspoon Smoked Paprika
- 2 Green Onions, chopped
Instructions
- Heat your cast-iron skillet over medium heat, adding olive oil. Toss in diced sweet potatoes, seasoning them with salt, black pepper, and smoked paprika. Sauté until tender and slightly crispy, about 10-12 minutes.
- Add the sliced red onion and corn to the skillet. Sauté for another 5 minutes, allowing everything to meld together.
- Stir in the cooked chicken and BBQ sauce. Stir thoroughly until heated through and everything is coated.
- Top with shredded cheddar cheese and cover the skillet for a few moments to melt the cheese.
- Serve straight from the skillet, garnished with freshly chopped green onions.
