Description

A delightful one-pan meal that combines sweet potatoes, juicy chicken, BBQ sauce, and cheddar cheese for a comforting dinner.


Ingredients

  • 2 medium Sweet Potatoes, diced
  • 2 cups Cooked Chicken, shredded
  • 1/2 cup BBQ Sauce
  • 1 Red Onion, sliced
  • 1 cup Corn, fresh or frozen
  • 1 cup Cheddar Cheese, shredded
  • 2 tablespoons Olive Oil
  • Salt, to taste
  • Black Pepper, to taste
  • 1 teaspoon Smoked Paprika
  • 2 Green Onions, chopped

Instructions

  1. Heat your cast-iron skillet over medium heat, adding olive oil. Toss in diced sweet potatoes, seasoning them with salt, black pepper, and smoked paprika. Sauté until tender and slightly crispy, about 10-12 minutes.
  2. Add the sliced red onion and corn to the skillet. Sauté for another 5 minutes, allowing everything to meld together.
  3. Stir in the cooked chicken and BBQ sauce. Stir thoroughly until heated through and everything is coated.
  4. Top with shredded cheddar cheese and cover the skillet for a few moments to melt the cheese.
  5. Serve straight from the skillet, garnished with freshly chopped green onions.
