Description

A vibrant and flavorful salmon dish with a tangy lemon and Dijon mustard glaze, complemented by roasted mixed vegetables.


Ingredients

  • 4 salmon fillets
  • 2 tablespoons Dijon mustard
  • 2 tablespoons honey
  • 1 lemon (juiced)
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 2 cups mixed vegetables (e.g., broccoli, bell peppers, carrots)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Whisk together the Dijon mustard, honey, lemon juice, and olive oil in a mixing bowl.
  3. Prepare a baking sheet by lining it with parchment paper.
  4. Arrange the salmon fillets on the baking sheet with space in between.
  5. Add the mixed vegetables around the salmon.
  6. Coat the salmon and vegetables with the marinade.
  7. Season with salt and pepper to taste.
  8. Bake for about 15 minutes, or until the salmon flakes easily with a fork.
