Ingredients
- Feta Cheese: 200g
- Cherry Tomatoes: 200g, halved
- Red Bell Pepper: 1, diced
- Fresh Spinach: 2 cups
- Eggs: 4
- Olive Oil: 2 tablespoons
- Salt: to taste
- Pepper: to taste
- Herbs (optional): Fresh or dried oregano, thyme, or basil
Instructions
- Preheat your oven to 375°F (190°C).
- Layer crumbled feta cheese in individual ramekins.
- Heap halved cherry tomatoes and diced red bell pepper over the feta.
- Pile in fresh spinach, pressing it gently into the mix.
- Crack an egg on top of each ramekin.
- Drizzle with olive oil, sprinkle with salt, pepper, and optional herbs.
- Bake for 20–25 minutes until eggs reach desired doneness.
- Serve warm with crusty bread.
Notes
For a more firm yolk, bake for the full 25 minutes. Rotate ramekins halfway through the baking time for even cooking.
