Description

A comforting and flavorful dish featuring baked feta, fresh spinach, cherry tomatoes, and eggs, perfect for breakfast or brunch.


Ingredients

  • Feta Cheese: 200g
  • Cherry Tomatoes: 200g, halved
  • Red Bell Pepper: 1, diced
  • Fresh Spinach: 2 cups
  • Eggs: 4
  • Olive Oil: 2 tablespoons
  • Salt: to taste
  • Pepper: to taste
  • Herbs (optional): Fresh or dried oregano, thyme, or basil

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Layer crumbled feta cheese in individual ramekins.
  3. Heap halved cherry tomatoes and diced red bell pepper over the feta.
  4. Pile in fresh spinach, pressing it gently into the mix.
  5. Crack an egg on top of each ramekin.
  6. Drizzle with olive oil, sprinkle with salt, pepper, and optional herbs.
  7. Bake for 20–25 minutes until eggs reach desired doneness.
  8. Serve warm with crusty bread.

Notes

For a more firm yolk, bake for the full 25 minutes. Rotate ramekins halfway through the baking time for even cooking.
