A comforting dish featuring roasted butternut squash, crispy Brussels sprouts, and hearty smoked sausage, all enveloped in garlic butter and served with bow tie pasta.

- 3 cups butternut squash, peeled, seeded, and cubed
- 1 tablespoon olive oil (for butternut squash)
- Salt and pepper to taste (for butternut squash)
- 340 g Brussels sprouts, trimmed and halved
- 2 tablespoons olive oil (for Brussels sprouts)
- 225 g bow tie pasta
- 1 tablespoon olive oil (for the pasta dish)
- 340 g cooked smoked sausage (cajun, andouille, or regular)
- 5 cloves garlic, minced
- 2 tablespoons butter
- Salt and pepper to taste (for the pasta dish)
- ¼ teaspoon smoked paprika
- Fresh thyme leaves
Instructions
- Preheat your oven to 200°C (400°F).
- Toss the cubed butternut squash with 1 tablespoon of olive oil, salt, and pepper. Spread on a baking sheet and roast for 15 to 20 minutes.
- Trim and halve the Brussels sprouts; toss them with 2 tablespoons of olive oil, salt, and pepper. Spread them on a different baking sheet and roast for 20 to 30 minutes.
- Boil salted water in a large pot and cook the bow tie pasta according to package directions until al dente. Drain, reserving some pasta water.
- In a skillet, heat 1 tablespoon of olive oil over medium heat and cook the smoked sausage until browned, about 5–7 minutes.
- In the same skillet, cook the minced garlic until fragrant and then add the butter, melting it into a base.
- Combine the drained pasta with the garlic butter, seasoning with salt, pepper, and smoked paprika.
- Gently incorporate the roasted butternut squash, Brussels sprouts, and browned sausage, adding fresh thyme. Adjust seasoning as necessary and serve immediately.

Make-ahead tips: Prepare roasted vegetables and sausage in advance; mix with pasta fresh before serving. Customize with cream or cheese for added richness.
