Description

A comforting dish featuring roasted butternut squash, crispy Brussels sprouts, and hearty smoked sausage, all enveloped in garlic butter and served with bow tie pasta.


Ingredients

  • 3 cups butternut squash, peeled, seeded, and cubed
  • 1 tablespoon olive oil (for butternut squash)
  • Salt and pepper to taste (for butternut squash)
  • 340 g Brussels sprouts, trimmed and halved
  • 2 tablespoons olive oil (for Brussels sprouts)
  • 225 g bow tie pasta
  • 1 tablespoon olive oil (for the pasta dish)
  • 340 g cooked smoked sausage (cajun, andouille, or regular)
  • 5 cloves garlic, minced
  • 2 tablespoons butter
  • Salt and pepper to taste (for the pasta dish)
  • ¼ teaspoon smoked paprika
  • Fresh thyme leaves

Instructions

  1. Preheat your oven to 200°C (400°F).
  2. Toss the cubed butternut squash with 1 tablespoon of olive oil, salt, and pepper. Spread on a baking sheet and roast for 15 to 20 minutes.
  3. Trim and halve the Brussels sprouts; toss them with 2 tablespoons of olive oil, salt, and pepper. Spread them on a different baking sheet and roast for 20 to 30 minutes.
  4. Boil salted water in a large pot and cook the bow tie pasta according to package directions until al dente. Drain, reserving some pasta water.
  5. In a skillet, heat 1 tablespoon of olive oil over medium heat and cook the smoked sausage until browned, about 5–7 minutes.
  6. In the same skillet, cook the minced garlic until fragrant and then add the butter, melting it into a base.
  7. Combine the drained pasta with the garlic butter, seasoning with salt, pepper, and smoked paprika.
  8. Gently incorporate the roasted butternut squash, Brussels sprouts, and browned sausage, adding fresh thyme. Adjust seasoning as necessary and serve immediately.

Notes

Make-ahead tips: Prepare roasted vegetables and sausage in advance; mix with pasta fresh before serving. Customize with cream or cheese for added richness.
