Ingredients

  • Pork Medallions or Chops
  • Apple Cider
  • Fresh Garlic
  • Herbs (Thyme or Rosemary)
  • Butter
  • Sweet Potatoes

Instructions

  1. Melt the butter in a cast-iron skillet over medium heat until frothy.
  2. Sauté minced garlic until fragrant, about 30 seconds to 1 minute.
  3. Brown the pork medallions for about 3-4 minutes on each side until golden-brown.
  4. Simmer with apple cider and herbs, and let it cook for 10-15 minutes.
  5. Prepare sweet potatoes by peeling, cubing, and boiling until tender, around 15-20 minutes.
  6. Mash the sweet potatoes with butter, salt, and pepper, then serve with pork and pan sauce.

Notes

You can make the pork a day ahead and reheat in the sauce. Feel free to customize ingredients as desired.
