Description
A comforting dish of pork medallions simmered in apple cider, served with creamy mashed sweet potatoes.
Ingredients
- Pork Medallions or Chops
- Apple Cider
- Fresh Garlic
- Herbs (Thyme or Rosemary)
- Butter
- Sweet Potatoes
- Salt and Pepper
Instructions
- Melt the butter in a cast-iron skillet over medium heat until frothy.
- Sauté minced garlic until fragrant, about 30 seconds to 1 minute.
- Brown the pork medallions for about 3-4 minutes on each side until golden-brown.
- Simmer with apple cider and herbs, and let it cook for 10-15 minutes.
- Prepare sweet potatoes by peeling, cubing, and boiling until tender, around 15-20 minutes.
- Mash the sweet potatoes with butter, salt, and pepper, then serve with pork and pan sauce.
Notes
You can make the pork a day ahead and reheat in the sauce. Feel free to customize ingredients as desired.
