- 1 cup Apple Cider
- 2 Shallots, diced
- 3 cloves Garlic, minced
- 2 tbsp Olive Oil
- 2 tsp Fresh Thyme (or dried)
- Salt & Pepper to taste
- Potatoes or Seasonal Vegetables (for serving)
Instructions
- Season the chicken by patting it dry and seasoning both sides with salt, pepper, and thyme.
- Sear the chicken in a skillet with olive oil over medium-high heat for about 5 minutes per side until golden brown.
- Add the shallots and minced garlic, cooking until softened, about 2-3 minutes.
- Pour in the apple cider, deglazing the pan and scraping up the brown bits.
- Cook by covering the skillet and simmering for 30 minutes until the chicken reaches an internal temperature of 165°F.
- Serve the chicken with roasted potatoes or seasonal veggies, drizzled with the sauce.
Notes
Marinate the chicken in apple cider for deeper flavor. Allow chicken to rest after cooking for juiciness.
