Description

A warm and comforting casserole featuring chicken breasts, rice, and a creamy sauce, topped with melted cheddar cheese.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 cups white rice
  • 4 cups chicken broth
  • 1 can cream of mushroom soup
  • 1 can cream of chicken soup
  • 1 packet onion soup mix
  • 1 cup shredded cheddar cheese
  • Salt and pepper to taste
  • Chopped parsley for garnish

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Whisk together the cream of mushroom soup, cream of chicken soup, onion soup mix, and chicken broth until well combined.
  3. Grease your 9×13 inch casserole dish, then spread the uncooked rice evenly across the bottom.
  4. Place the chicken breasts atop the rice and season them generously with salt and pepper.
  5. Pour the soup mixture over the chicken and rice, covering everything.
  6. Cover the casserole dish with aluminum foil and place it in the preheated oven. Bake for 1 hour.
  7. Remove the foil and sprinkle shredded cheddar cheese over the top.
  8. Return to the oven and bake uncovered for an additional 15-20 minutes until the cheese bubbles and turns golden.
  9. Garnish with chopped parsley before serving.

Notes

Make-ahead option: Assemble the casserole a day in advance and refrigerate until ready to bake. Adjust baking time as needed.
