Instructions
- Soak the noodles: Begin by placing the glass noodles in a bowl of hot water. Let them soak for about 10 minutes, or until soft. After they’re tender, drain and set aside.
- Combine the veggies: In a large bowl, bring together the soaked noodles, fresh herbs, shredded carrots, chopped lettuce, sliced cucumber, and red bell pepper. Toss gently to mix all the colors and textures.
- Prepare the dressing: In a small bowl, whisk together the soy sauce, lime juice, sesame oil, sugar, and chili flakes until well combined.
- Dress the salad: Pour the dressing over your noodle salad. Toss gently yet thoroughly, ensuring that every strand of noodle and every crunchy bite gets coated in that vibrant, zesty dressing.
