Description

  • 1 cup shredded carrots
  • 1 cup chopped lettuce
  • 1/2 cup sliced cucumber
  • 1/4 cup sliced red bell pepper
  • 2 tablespoons soy sauce
  • 1 tablespoon lime juice
  • 1 tablespoon sesame oil
  • 1 teaspoon sugar
  • Chili flakes to taste

Instructions

  1. Soak the noodles: Begin by placing the glass noodles in a bowl of hot water. Let them soak for about 10 minutes, or until soft. After they’re tender, drain and set aside.
  2. Combine the veggies: In a large bowl, bring together the soaked noodles, fresh herbs, shredded carrots, chopped lettuce, sliced cucumber, and red bell pepper. Toss gently to mix all the colors and textures.
  3. Prepare the dressing: In a small bowl, whisk together the soy sauce, lime juice, sesame oil, sugar, and chili flakes until well combined.
  4. Dress the salad: Pour the dressing over your noodle salad. Toss gently yet thoroughly, ensuring that every strand of noodle and every crunchy bite gets coated in that vibrant, zesty dressing.
