- 2 cups fresh pineapple, diced
- 1 cup sugar
- 1 tablespoon cornstarch
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1/2 cup unsalted butter, melted
- 1/2 cup milk
- 1 tablespoon baking powder
- 1/2 teaspoon salt
Instructions
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, combine the diced pineapple, sugar, cornstarch, and vanilla extract. Mix well and set aside.
- In another bowl, whisk together the flour, baking powder, and salt.
- Add the melted butter and milk to the dry ingredients and mix until just combined.
- Pour the pineapple mixture into a greased baking dish.
- Drop spoonfuls of the cobbler batter over the pineapple filling.
- Bake for 30-35 minutes or until the cobbler is golden brown.
- Let it cool slightly before serving.
Notes
- Serve warm with a scoop of vanilla ice cream for an extra treat.
- Can substitute fresh pineapple with canned pineapple if needed.
