Description

A vibrant and refreshing Thai Chicken Salad featuring crunchy vegetables, succulent chicken, and a creamy peanut dressing.


Ingredients

  • 2 cups shredded cabbage
  • 2 cups cooked shredded chicken
  • 1/2 cup crunchy peanuts
  • 1/4 cup chopped cilantro
  • 1/4 cup green onions, sliced
  • 1/4 cup peanut butter
  • 2 tablespoons soy sauce
  • 2 tablespoons honey
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame oil
  • 1 teaspoon lime juice
  • Salt and pepper to taste

Instructions

  1. Combine the shredded cabbage, shredded chicken, crunchy peanuts, chopped cilantro, and sliced green onions in a large mixing bowl.
  2. Whisk together the peanut butter, soy sauce, honey, rice vinegar, sesame oil, lime juice, salt, and pepper in a separate bowl to make the dressing.
  3. Pour the peanut dressing over the salad mixture and gently toss to combine.
  4. Serve chilled, garnished with extra cilantro or peanuts if desired.
