Description

A refreshing bowl of Thai Cucumber Salad with crisp cucumbers, sweet cherry tomatoes, red onion, and cilantro, tossed in a zesty lime dressing.


Ingredients

  • 2 cucumbers, sliced
  • 1 cup cherry tomatoes, halved
  • 1/4 red onion, thinly sliced
  • 1/4 cup fresh cilantro, chopped
  • 1 tablespoon fish sauce
  • 2 tablespoons lime juice
  • 1 teaspoon sugar
  • 1/2 teaspoon red pepper flakes (optional)

Instructions

  1. Wash the cucumbers and slice them into thin rounds or half-moons, then place them into a large mixing bowl.
  2. Add cherry tomatoes, red onion, and cilantro to the bowl and gently stir to combine.
  3. In a small bowl, whisk together fish sauce, lime juice, sugar, and red pepper flakes, if desired.
