Instructions
- Wash the cucumbers and slice them into thin rounds or half-moons, then place them into a large mixing bowl.
- Add cherry tomatoes, red onion, and cilantro to the bowl and gently stir to combine.
- In a small bowl, whisk together fish sauce, lime juice, sugar, and red pepper flakes, if desired.
- Pour the dressing over the salad and toss gently to coat.
- Chill in the refrigerator for 15-30 minutes before serving.
