- 2 large cucumbers
- 1 cup cooked chicken, shredded
- 1/4 cup Greek yogurt or mayonnaise
- 1/4 cup diced celery
- 1/4 cup diced red onion

Instructions
- Prepare the cucumbers: Slice the cucumbers lengthwise and scoop out the seeds.
- Mix the chicken salad: In a bowl, combine shredded chicken, yogurt or mayonnaise, celery, red onion, mustard, salt, and pepper.
- Fill the cucumbers with the chicken salad mixture.
- Roll them up: Fold the cucumber halves over the filling and secure with toothpicks if necessary.
- Garnish with dill or parsley and serve immediately.
Notes
Chill cucumbers before serving for extra crunch. Use rotisserie chicken for quick preparation.
