Description

Crunchy cucumbers filled with a creamy chicken salad, fresh vegetables, and herbs, perfect for appetizers or lunch.


Ingredients

  • 2 large cucumbers
  • 1 cup cooked chicken, shredded
  • 1/4 cup Greek yogurt or mayonnaise
  • 1/4 cup diced celery
  • 1/4 cup diced red onion
  • 1 tablespoon Dijon mustard
  • Salt and pepper to taste
  • Fresh dill or parsley for garnish

Instructions

  1. Prepare the cucumbers: Slice the cucumbers lengthwise and scoop out the seeds.
  2. Mix the chicken salad: In a bowl, combine shredded chicken, yogurt or mayonnaise, celery, red onion, mustard, salt, and pepper.
  3. Fill the cucumbers with the chicken salad mixture.
  4. Roll them up: Fold the cucumber halves over the filling and secure with toothpicks if necessary.
  5. Garnish with dill or parsley and serve immediately.

Notes

Chill cucumbers before serving for extra crunch. Use rotisserie chicken for quick preparation.
