- 1/2 cup mango puree
- 1/4 cup low-sodium soy sauce
- 2 tablespoons honey
- 1 tablespoon rice vinegar
- 1 tablespoon sesame oil
- 2 cloves garlic, minced
- 1 teaspoon ginger, grated
- Salt and pepper to taste
- Chopped green onions for garnish
- Sesame seeds for garnish
Instructions
- Preheat your oven to 400°F (200°C) or heat a skillet over medium-high heat.
- Combine the mango puree, soy sauce, honey, rice vinegar, sesame oil, minced garlic, grated ginger, salt, and pepper in a mixing bowl; whisk until smooth.
- Marinate the chicken breasts in the mixture for at least 30 minutes.
- For oven cooking, line a baking sheet with parchment paper and place the marinated chicken on it, baking for 25-30 minutes until the internal temperature reaches 165°F (75°C).
- For skillet cooking, sear the marinated chicken for 6-7 minutes per side until golden and caramelized.
- Let the chicken rest for a few minutes before serving.
- Garnish with chopped green onions and sesame seeds.
