Description

Juicy chicken glazed in a sweet and savory mango sauce, creating a delightful harmony of flavors and textures.


Ingredients

  • 2 lbs chicken breasts, boneless and skinless
  • 1/2 cup mango puree
  • 1/4 cup low-sodium soy sauce
  • 2 tablespoons honey
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame oil
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • Salt and pepper to taste
  • Chopped green onions for garnish
  • Sesame seeds for garnish

Instructions

  1. Preheat your oven to 400°F (200°C) or heat a skillet over medium-high heat.
  2. Combine the mango puree, soy sauce, honey, rice vinegar, sesame oil, minced garlic, grated ginger, salt, and pepper in a mixing bowl; whisk until smooth.
  3. Marinate the chicken breasts in the mixture for at least 30 minutes.
  4. For oven cooking, line a baking sheet with parchment paper and place the marinated chicken on it, baking for 25-30 minutes until the internal temperature reaches 165°F (75°C).
  5. For skillet cooking, sear the marinated chicken for 6-7 minutes per side until golden and caramelized.
  6. Let the chicken rest for a few minutes before serving.
  7. Garnish with chopped green onions and sesame seeds.

Notes

Marinate chicken overnight for deeper flavor. Try variations with different fruit purees or spices.
