Description

Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 tablespoon red food coloring
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder
  • Chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease your mini muffin pan generously.
  2. Mix together the melted butter and granulated sugar until smooth.
  3. Add in the eggs, red food coloring, and vanilla extract, and beat until smooth.
  4. Sift together the flour, cocoa powder, salt, and baking powder in another bowl.
  5. Fold the dry ingredients into the wet ingredients until just combined.
  6. If desired, fold in chocolate chips.
  7. Spoon the batter into the mini muffin pan, filling each cup two-thirds full.
  8. Bake for 10-12 minutes, or until a toothpick comes out clean.
  9. Allow to cool for a few minutes before removing from the pan.
