A delightful dessert of buttery shortbread crust layered with a spiced apple filling, topped with a crunchy oat topping.
Ingredients

- 2 cups all-purpose flour
- 1 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1/2 cup brown sugar, packed
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- 3 cups apples, peeled and diced
- 1 teaspoon cinnamon
- 1 tablespoon lemon juice
- 1 cup rolled oats
- 1/2 cup chopped nuts (optional)
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking dish.
- In a mixing bowl, combine the flour, softened butter, granulated sugar, brown sugar, vanilla extract, and salt.
- Press half of the crumbly mixture into the bottom of the prepared baking dish.
- In another bowl, toss the diced apples with cinnamon and lemon juice.
- Spread the apple mixture evenly over the crust.
- Sprinkle the remaining crumb mixture and the rolled oats atop the apples.
- Bake for 30-35 minutes until golden brown.
- Allow the bars to cool completely before slicing into squares.
Notes
Try adding nutmeg or cardamom for a twist, or drizzle caramel sauce before serving.
