Description

A vibrant and flavorful bowl combining grilled chicken, sweet corn, sautéed bell peppers, and fluffy rice, topped with fresh cilantro and lime.


Ingredients

  • 250 g Chicken Breast
  • 1 Cup Rice
  • 1 Cup Sweet Corn (fresh or frozen)
  • 1 Bell Pepper, diced
  • 1/2 Cup Onion, diced
  • 1 tsp Smoked Paprika
  • 1 tsp Garlic Powder
  • Salt and Pepper to taste
  • Fresh Cilantro for garnish
  • Lime wedges for serving

Instructions

  1. Cook the Rice: Prepare rice according to the package instructions. Fluff it with a fork once it’s cooked for a light and airy texture.
  2. Season the Chicken: In a bowl, generously season the chicken breast with smoked paprika, garlic powder, salt, and pepper. Let it marinate for a few minutes while you prepare other ingredients.
  3. Grill the Chicken: Heat a skillet or grill pan over medium heat. Place the seasoned chicken in the pan and cook for about 6-7 minutes per side until golden brown and cooked through (the internal temperature should reach 75°C/165°F). Remove the chicken and let it rest for a couple of minutes before slicing.
  4. Sauté Vegetables: In the same skillet, add diced onions and bell pepper. Sauté for approximately 5 minutes until they’re soft and fragrant.
  5. Add Sweet Corn: Stir in the sweet corn and cook for another 2-3 minutes. The corn should become slightly caramelized, enhancing its sweetness.
  6. Assemble the Bowl: In bowls, layer the cooked rice. Top with sliced chicken, sautéed vegetables, and the delicious corn mixture. Toss everything gently to combine and ensure the flavors meld beautifully.
  7. Garnish and Serve: Finish off with fresh cilantro and lime wedges for that vibrant pop of flavor. Serve immediately, reveling in the aromatic experience!
