Description

A vibrant and refreshing salad featuring crisp vegetables and a zesty ginger dressing, perfect for summer gatherings.


Ingredients

  • 1 cup shredded cabbage
  • 1 carrot, julienned
  • 1 cucumber, julienned
  • 1 bell pepper, sliced
  • 1/2 cup cilantro, chopped
  • 1/2 cup mint leaves, chopped
  • 1 avocado, sliced
  • 1/4 cup peanuts, crushed (optional)
  • 2 tablespoons fresh ginger, grated
  • 3 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame oil
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon chili paste (optional)

Instructions

  1. In a large bowl, toss together the shredded cabbage, julienned carrot, cucumber, sliced bell pepper, chopped cilantro, and mint.
  2. In a small bowl, whisk together the grated ginger, soy sauce, rice vinegar, sesame oil, honey (or maple syrup), and chili paste.
  3. Pour the dressing over the salad and gently toss to combine.
  4. Top with sliced avocado and sprinkle with crushed peanuts, if desired.
  5. Serve immediately for the best flavor and freshness.
