- 2 cups fresh spinach (or thawed frozen spinach)
- 1 cup cream cheese
- 1/2 cup grated Parmesan cheese
- 2 garlic cloves, minced
- 1 teaspoon lemon juice
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- Preheat the oven to 190°C (375°F).
- Heat olive oil in a pan over medium heat. Sauté minced garlic until fragrant, about 1 minute.
- Add fresh spinach to the pan and cook until wilted, approximately 2-3 minutes.
- Mix the wilted spinach with cream cheese, Parmesan, lemon juice, salt, and pepper in a bowl.
- Lay the salmon fillets on a clean surface and fill them carefully with the spinach mixture.
- Place the stuffed salmon in a greased baking dish, seam-side down.
- Bake the salmon for 20-25 minutes, or until fully cooked and tender.
- Serve the stuffed salmon hot, optionally garnished with fresh herbs.
