Description

Indulge in tender salmon fillets filled with a creamy spinach and cheese mixture, offering a delightful balance of flavor and nutrition.


Ingredients

  • 4 salmon fillets (skin-on or skinless)
  • 2 cups fresh spinach (or thawed frozen spinach)
  • 1 cup cream cheese
  • 1/2 cup grated Parmesan cheese
  • 2 garlic cloves, minced
  • 1 teaspoon lemon juice
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Preheat the oven to 190°C (375°F).
  2. Heat olive oil in a pan over medium heat. Sauté minced garlic until fragrant, about 1 minute.
  3. Add fresh spinach to the pan and cook until wilted, approximately 2-3 minutes.
  4. Mix the wilted spinach with cream cheese, Parmesan, lemon juice, salt, and pepper in a bowl.
  5. Lay the salmon fillets on a clean surface and fill them carefully with the spinach mixture.
  6. Place the stuffed salmon in a greased baking dish, seam-side down.
  7. Bake the salmon for 20-25 minutes, or until fully cooked and tender.
  8. Serve the stuffed salmon hot, optionally garnished with fresh herbs.

Notes

For make-ahead, prepare the filling a day in advance. Consider using an air fryer to reduce cooking time.
