Description

Delicious salmon pinwheels stuffed with spinach and feta cheese, perfect for a healthy and flavorful meal.


Ingredients

  • 4 salmon fillets
  • 1 cup fresh spinach, chopped
  • 1/2 cup feta cheese, crumbled
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon lemon juice
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat and sauté garlic until fragrant.
  3. Add chopped spinach and cook until wilted, then remove from heat.
  4. In a bowl, mix the sautéed spinach with feta cheese, lemon juice, salt, and pepper.
  5. Lay the salmon fillets flat and spread the spinach and feta mixture evenly on each fillet.
  6. Roll the salmon fillets tightly and secure with toothpicks.
  7. Place the pinwheels on a baking sheet and bake for 15-20 minutes or until the salmon is cooked through.
