Description

A soul-warming bowl of ramen featuring tender chicken, rich broth, and a kick of spice, perfect for cozy evenings.

Ingredients

Scale
  • 2 packages of ramen noodles
  • 2 chicken breasts, cooked and sliced
  • 4 cups chicken broth
  • 1 cup coconut milk
  • 2 tablespoons soy sauce
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 2 tablespoons sriracha (or to taste)
  • 2 green onions, chopped
  • 1 tablespoon sesame oil
  • Vegetables (e.g., spinach, mushrooms, bean sprouts) as desired
  • Soft-boiled eggs for topping (optional)

Instructions

  1. In a large pot, heat sesame oil over medium heat. Add minced garlic and grated ginger, cooking until fragrant, about 2 minutes.
  2. Pour in the chicken broth and coconut milk, bringing the mixture to a gentle simmer.
  3. Stir in soy sauce and sriracha, adjusting to your personal spice preference. Let the broth bubble for a minute, imparting all those lovely flavors.
  4. Throw in the cooked chicken and any desired vegetables, simmering for an additional 3-5 minutes until heated through and the veggies brighten.
  5. In a separate pot, cook the ramen noodles according to package instructions. Drain well, ensuring you remove excess water.
  6. Serve the steamy broth in bowls, topped with ramen noodles, sliced green onions, and a soft-boiled egg if desired.

Notes

Customize with additional vegetables like bok choy or sweet corn and enjoy with sides like spring rolls or gyoza.
