Transforming a summer classic into a luscious dessert, S’mores Cookie Bars combine chocolate, gooey marshmallow, and crunchy graham crackers for a delicious treat any time of the year.

- 1/2 cup Butter (softened)
- 1/3 cup Brown Sugar
- 1/4 cup Granulated Sugar
- 1 Egg
- 1 tsp Vanilla Extract
- 1 1/2 cup All-Purpose Flour
- 1/2 cup Graham Crackers (finely crushed)
- 1/4 tsp Salt
- 3/4 tsp Baking Soda
- 5 Standard Hershey Bars
- 1 1/2 cup Marshmallow Fluff
Instructions
- Preheat the oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper.
- Cream the butter and sugars until creamy and fluffy, about 2-3 minutes.
- Add the egg and vanilla, mixing until well combined.
- Incorporate the dry ingredients including flour, crushed graham crackers, salt, and baking soda.
- Press half of the dough evenly into the bottom of the prepared baking pan.
- Chill the first layer in the freezer for about 10 minutes.
- Re-line the pan with more parchment paper for the next dough layer.
- Layer the chocolate bars over the dough, breaking them if needed.
- Add the marshmallow fluff evenly over the chocolate.
- Top with the remaining dough and smooth it down with a spatula.
- Bake for 25 minutes, or until the edges are golden brown.
- Cool completely in the pan before slicing.
Notes
Make-ahead tips: You can prepare and freeze the dough for up to a month. Allow to thaw before baking. Avoid over-mixing and always chill your layers for better structure.
