Description

Transforming a summer classic into a luscious dessert, S’mores Cookie Bars combine chocolate, gooey marshmallow, and crunchy graham crackers for a delicious treat any time of the year.


Ingredients

  • 1/2 cup Butter (softened)
  • 1/3 cup Brown Sugar
  • 1/4 cup Granulated Sugar
  • 1 Egg
  • 1 tsp Vanilla Extract
  • 1 1/2 cup All-Purpose Flour
  • 1/2 cup Graham Crackers (finely crushed)
  • 1/4 tsp Salt
  • 3/4 tsp Baking Soda
  • 5 Standard Hershey Bars
  • 1 1/2 cup Marshmallow Fluff

Instructions

  1. Preheat the oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper.
  2. Cream the butter and sugars until creamy and fluffy, about 2-3 minutes.
  3. Add the egg and vanilla, mixing until well combined.
  4. Incorporate the dry ingredients including flour, crushed graham crackers, salt, and baking soda.
  5. Press half of the dough evenly into the bottom of the prepared baking pan.
  6. Chill the first layer in the freezer for about 10 minutes.
  7. Re-line the pan with more parchment paper for the next dough layer.
  8. Layer the chocolate bars over the dough, breaking them if needed.
  9. Add the marshmallow fluff evenly over the chocolate.
  10. Top with the remaining dough and smooth it down with a spatula.
  11. Bake for 25 minutes, or until the edges are golden brown.
  12. Cool completely in the pan before slicing.

Notes

Make-ahead tips: You can prepare and freeze the dough for up to a month. Allow to thaw before baking. Avoid over-mixing and always chill your layers for better structure.
