- 1 lb chicken thighs, boneless and skinless
- 2 tablespoons soy sauce
- 1 tablespoon fish sauce
- 1 tablespoon honey
- 1 tablespoon lime juice
- 1 tablespoon olive oil
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 cup broccoli florets
- 1 cup snap peas
- 2 cloves garlic, minced
- 1 teaspoon ginger, grated
- Fresh cilantro for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, mix soy sauce, fish sauce, honey, lime juice, olive oil, garlic, and ginger.
- Add chicken thighs to the marinade and let sit for at least 15 minutes.
- On a sheet pan, arrange the marinated chicken and surround it with sliced bell peppers, broccoli, and snap peas.
- Drizzle any remaining marinade over the vegetables.
- Bake for 25-30 minutes or until the chicken is cooked through and vegetables are tender.
- Garnish with fresh cilantro before serving.
Notes
- For extra flavor, marinate the chicken for a few hours or overnight.
- Feel free to substitute vegetables based on your preference.
