Description

Ingredients

  • 1 lb chicken thighs, boneless and skinless
  • 2 tablespoons soy sauce
  • 1 tablespoon fish sauce
  • 1 tablespoon honey
  • 1 tablespoon lime juice
  • 1 tablespoon olive oil
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 cup broccoli florets
  • 1 cup snap peas
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • Fresh cilantro for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mix soy sauce, fish sauce, honey, lime juice, olive oil, garlic, and ginger.
  3. Add chicken thighs to the marinade and let sit for at least 15 minutes.
  4. On a sheet pan, arrange the marinated chicken and surround it with sliced bell peppers, broccoli, and snap peas.
  5. Drizzle any remaining marinade over the vegetables.
  6. Bake for 25-30 minutes or until the chicken is cooked through and vegetables are tender.
  7. Garnish with fresh cilantro before serving.
