Description

A comforting one-pan meal featuring flavorful sausage, fluffy rice, and vibrant vegetables, perfect for busy weeknights.


Ingredients

  • 1 lb (450g) sausage (Italian, turkey, or chicken)
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1 medium onion, chopped
  • 1 bell pepper, chopped
  • 2 cloves garlic, minced
  • 1/2 teaspoon paprika
  • 1/2 teaspoon dried thyme
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1/2 cup frozen peas (optional)
  • Fresh parsley (for garnish)

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the sausage, breaking it apart and cooking until browned, about 6-8 minutes.
  3. Remove the sausage and sauté onion, bell pepper, and garlic in the same skillet for 2-3 minutes.
  4. Add the rice and stir to coat it with the mixture.
  5. Pour in the chicken broth and add paprika, thyme, salt, and pepper. Stir well.
  6. Bring to a simmer, cover, and cook on low for about 15-20 minutes until the rice is tender.
  7. Stir in frozen peas if using, and cook for an additional 3-5 minutes until heated through.
  8. Garnish with fresh parsley before serving.

Notes

For best results, avoid lifting the lid while the rice is simmering to prevent mushiness.
