- 1 lb (450g) sausage (Italian, turkey, or chicken)
- 1 cup long-grain white rice
- 2 cups chicken broth
- 1 medium onion, chopped
- 1 bell pepper, chopped
- 2 cloves garlic, minced
- 1/2 teaspoon paprika
- 1/2 teaspoon dried thyme
- Salt and pepper to taste
- 1 tablespoon olive oil
- 1/2 cup frozen peas (optional)
- Fresh parsley (for garnish)
Instructions
- Heat the olive oil in a large skillet over medium heat.
- Add the sausage, breaking it apart and cooking until browned, about 6-8 minutes.
- Remove the sausage and sauté onion, bell pepper, and garlic in the same skillet for 2-3 minutes.
- Add the rice and stir to coat it with the mixture.
- Pour in the chicken broth and add paprika, thyme, salt, and pepper. Stir well.
- Bring to a simmer, cover, and cook on low for about 15-20 minutes until the rice is tender.
- Stir in frozen peas if using, and cook for an additional 3-5 minutes until heated through.
- Garnish with fresh parsley before serving.
Notes
For best results, avoid lifting the lid while the rice is simmering to prevent mushiness.
