- 2 pounds flank steak
- 1 pound baby potatoes
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh thyme, chopped
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Season the flank steak with salt, pepper, garlic, rosemary, and thyme.
- In a large skillet, heat olive oil over medium-high heat and sear the flank steak for 3-4 minutes on each side until browned.
- Transfer the steak to a baking dish.
- In the same skillet, add the baby potatoes and toss them in the remaining oil and seasonings.
- Arrange the potatoes around the flank steak in the baking dish.
- Bake in the preheated oven for 25-30 minutes or until the steak reaches desired doneness.
- Let the steak rest for 10 minutes before slicing.
- Serve the sliced steak with roasted potatoes on the side.
