Instructions
- In a large skillet, heat the olive oil over medium heat until shimmering.
- Add the diced chicken to the skillet. Season with salt and pepper, cooking until browned and cooked through, roughly 5 to 7 minutes.
- Toss in the diced bell peppers, continuing to cook for an additional 2 to 3 minutes.
- Gently fold in the pineapple chunks, soy sauce, and peanut butter. Mix well, allowing the ingredients to meld together, and let it simmer for 3 to 5 minutes.

Notes
