Description

A comforting dish that combines savory chicken and sweet pineapple atop fluffy rice, perfect for weeknight dinners or festive gatherings.


Ingredients

  • 2 cups cooked rice
  • 1 pound chicken breast, diced
  • 1 cup pineapple chunks (fresh or canned)
  • 1/2 cup bell peppers, diced
  • 1/4 cup soy sauce
  • 2 tablespoons peanut butter
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Green onions for garnish

Instructions

  1. In a large skillet, heat the olive oil over medium heat until shimmering.
  2. Add the diced chicken to the skillet. Season with salt and pepper, cooking until browned and cooked through, roughly 5 to 7 minutes.
  3. Toss in the diced bell peppers, continuing to cook for an additional 2 to 3 minutes.
  4. Gently fold in the pineapple chunks, soy sauce, and peanut butter. Mix well, allowing the ingredients to meld together, and let it simmer for 3 to 5 minutes.
  5. Serve the savory chicken mixture over cooked rice, garnished with slivers of green onion.

Notes
