Description

A delightful sourdough bread infused with iconic pizza flavors, featuring mozzarella, Parmesan, and mini pepperoni.


Ingredients

  • 1 cup active sourdough starter (fed and bubbly)
  • 3 1/4 cups bread flour
  • 1 cup lukewarm water
  • 1 tsp salt
  • 1 tbsp sugar
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1/3 cup mini pepperoni slices (plus extras for topping)
  • 1/4 cup pizza sauce (thick, not watery)
  • 1 tsp dried oregano or Italian seasoning

Instructions

  1. Mix the Dough: In a large mixing bowl, combine your active sourdough starter, lukewarm water, and sugar. Stir until the mixture is smooth and the sugar dissolves.
  2. Add Flour: Gradually add in the bread flour, mixing until you form a sticky dough.
  3. Rest Period: Allow the dough to rest for 30 minutes.
  4. Incorporate Seasonings and Ingredients: After resting, sprinkle the salt and dried oregano over the dough. Fold in the shredded mozzarella, grated Parmesan, and pepperoni slices.
  5. Stretch and Fold: For the next 2 hours, every 30 minutes, stretch and fold the dough.
  6. First Rise: After two hours, cover the dough and let it rise in a warm area until puffy, about 4 hours.
  7. Shape the Loaf: Gently turn the dough onto a floured surface and shape it into a round loaf. Transfer it to a floured banneton.
  8. Cold Proof: Place the banneton in the refrigerator overnight.
  9. Preheat the Oven: The next day, preheat your oven to 475°F.
  10. Prepare to Bake: Carefully remove the dough from the refrigerator. Score the top and sprinkle with extra cheese and pepperoni.
  11. Bake Covered: Lower the loaf onto the hot Dutch oven, cover, and bake for 25 minutes.
  12. Bake Uncovered: Remove the lid and bake for another 20 minutes until golden brown.
  13. Cool and Slice: Allow the bread to cool completely on a wire rack before slicing.

Notes

Make sure your sourdough starter is active for best results. Customize the bread with different toppings as desired.
