Description

Ingredients

  • 3/4 cup smooth peanut butter
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup all-purpose flour
  • 1/4 cup cocoa powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter
  • 6 ounces semi-sweet chocolate
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 large egg yolk
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (180°C) and prepare an 8×8 inch pan with parchment paper.
  2. In a mixing bowl, combine the peanut butter, powdered sugar, and vanilla until smooth; set aside.
  3. Melt the unsalted butter and semi-sweet chocolate together in a microwave-safe bowl until smooth.
  4. Whisk the granulated sugar, eggs, and egg yolk until light and fluffy, then mix in the vanilla.
  5. Fold the melted chocolate mixture into the egg mixture until combined.
  6. Sift the flour, cocoa powder, and salt, then gently fold into the chocolate mixture until smooth.
  7. Spread half of the brownie batter in the pan, then add the peanut butter filling on top, followed by the remaining brownie batter.
  8. Bake for 25-30 minutes until a toothpick comes out with a few moist crumbs.
  9. Cool in the pan for 15 minutes before transferring to a wire rack to cool completely.

Notes

These brownies can be made in advance and stored in an airtight container for up to 3 days or frozen for up to 2 months.
