- 6.5 ounces (180 grams) dark chocolate (50-70%)
- 1 cup granulated sugar (200 grams)
- 2 large eggs (whisked)
- 1 teaspoon vanilla extract
- 1/2 cup all-purpose flour (63 grams)
- 1/4 cup cocoa powder (20 grams)
- 1/4 teaspoon salt
- 9 peanut butter cups
Instructions
- Preheat the oven to 350°F (180°C).
- Prepare an 8×8 inch baking pan by lining it with parchment paper or aluminum foil.
- Melt the chocolate and butter in a large bowl, microwaving in 45-second intervals until smooth.
- Cool the melted mixture slightly, then whisk in the sugar.
- Add the whisked eggs and vanilla extract, stirring until glossy.
- Mix in the flour, cocoa powder, and salt until just combined.
- Layer half of the brownie batter in the prepared pan and place the peanut butter cups on top.
- Top with the remaining brownie batter, covering the peanut butter cups.
- Bake for 27-32 minutes or until a toothpick comes out clean.
- Cool for 3-4 hours before slicing into squares.
Notes
For added flair, swirl some peanut butter into the batter before baking. Serve warm with vanilla ice cream.
