Description

A nostalgic treat combining creamy peanut butter and fruity jelly, topped with a delightful crunchy texture.

Ingredients

Scale
  • 1 cup creamy peanut butter
  • 1/2 cup unsalted butter, softened
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup grape or strawberry jelly
  • 1/2 cup chopped peanuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease your 9×9-inch baking pan to ensure easy removal.
  2. Mix together the creamy peanut butter and softened butter in a large bowl.
  3. Add the brown sugar and granulated sugar, mixing until blended.
  4. Beat in the eggs and vanilla extract until smooth.
  5. Whisk together the flour, baking powder, and salt in another bowl.
  6. Gradually add the dry ingredients to the wet mixture, stirring gently until just combined.
  7. Spread half of the batter into the greased baking pan.
  8. Spoon the jelly over the batter evenly.
  9. Drop spoonfuls of the remaining batter over the jelly layer.
  10. Sprinkle chopped peanuts on top if desired.
  11. Bake for 25-30 minutes or until golden brown.
  12. Let cool in the pan before slicing into bars.

Notes

Make-ahead tips: Prepare the batter a day in advance and refrigerate. Can be reheated in the microwave.
