- 2 cups mashed potatoes (cooled)
- ½ cup grated Parmesan cheese
- 2 garlic cloves, minced
- 1 large egg
- ¼ teaspoon black pepper
- ½ teaspoon salt
- 2 tablespoons chopped parsley (optional)
- 1 cup all-purpose flour
- 2 large eggs (beaten)
- 1 cup breadcrumbs (plain or seasoned)
- Vegetable oil (for deep frying)
Instructions
- In a large mixing bowl, combine the cooled mashed potatoes, grated Parmesan cheese, minced garlic, one egg, salt, black pepper, and parsley (if using). Mix until incorporated.
- Scoop approximately 1 tablespoon of the mixture and roll it into a ball between your palms.
- Prepare three shallow bowls with flour, beaten eggs, and breadcrumbs.
- Coat each potato ball in flour, tap off the excess, dip in the beaten eggs, and then coat in breadcrumbs.
- Heat vegetable oil in a deep pan to 350°F (175°C).
- Fry the potato balls in batches until golden brown (about 2-3 minutes).
- Drain on a plate lined with paper towels and serve warm with your favorite dipping sauces.
Notes
For a healthier alternative, try baking or air frying the potato balls instead of deep frying.
