Description

A delightful bread infused with zesty lemon and crunchy poppy seeds, perfect for breakfast or afternoon tea.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 cup poppy seeds
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1/2 cup sour cream
  • 1/4 cup fresh lemon juice
  • Zest of 1 lemon
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and grease and flour your loaf pan.
  2. Whisk together the all-purpose flour, baking powder, baking soda, salt, and poppy seeds in a large bowl.
  3. Cream the softened butter and granulated sugar together until light and fluffy.
  4. Beat the eggs into the butter mixture one at a time.
  5. Stir in the sour cream, lemon juice, lemon zest, and vanilla extract until just combined.
  6. Add the dry ingredients to the wet ingredients, mixing gently.
  7. Pour the batter into your prepared loaf pan.
  8. Bake for 50-60 minutes, or until a toothpick comes out clean.
  9. Let the bread cool in the pan for 10 minutes before transferring to a wire rack.

Notes

This bread can be frozen for up to 3 months. Slice before freezing for easy access.
