Description

A delightful fusion of flavors in a crispy quesadilla filled with mozzarella, feta, spinach, and tomatoes.


Ingredients

  • 4 large wheat tortillas
  • 1 cup fresh spinach, chopped
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup crumbled feta cheese
  • 1 small tomato, diced
  • 1/4 cup red onion, thinly sliced
  • 1 tablespoon olive oil
  • Black pepper to taste

Instructions

  1. Prepare the filling: In a large bowl, combine the mozzarella, feta, chopped spinach, diced tomato, thinly sliced red onion, and a generous pinch of black pepper. Mix well to ensure every ingredient marries beautifully.
  2. Assemble the quesadilla: Take one tortilla and lay it flat on a clean workspace. Adding a quarter of the filling to one half of the tortilla, then fold the other half over.
  3. Heat the pan: Place a non-stick pan over medium heat and warm up the olive oil until it shimmers invitingly.
  4. Cook the quesadilla: Gently place the filled tortilla in the pan. Allow it to cook for 3–4 minutes or until the bottom turns a luscious, golden brown and crispy.
  5. Flip the quesadilla: Carefully use your spatula to flip the quesadilla. Cook the other side for another 3–4 minutes until it achieves a wonderful crunch.
  6. Serve it up: Once golden and crispy on both sides, remove the quesadilla from the pan. Cut it into wedges using a pizza cutter or a knife and serve while it’s still warm.

Notes

Make the filling ahead of time for convenience. Avoid overfilling the quesadillas to prevent mess during cooking.
