Description

A delightful fusion of creamy mashed potatoes and zesty taco ingredients served in a crispy tortilla bowl.


Ingredients

  • 4 large Russet potatoes
  • 1 pound ground beef or turkey
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream or Greek yogurt
  • 2 tablespoons taco seasoning
  • 1 cup diced tomatoes
  • 1 cup shredded lettuce
  • 1/2 cup diced jalapeños
  • 1 avocado, diced
  • 8 corn tortillas

Instructions

  1. Prepare the Potatoes: Peel and chop the potatoes into uniform pieces. Boil them in salted water until tender. Drain and mash with butter, salt, and milk until creamy.
  2. Cook the Meat: In a skillet, brown the ground beef over medium heat. Drain excess fat and add taco seasoning, stirring and cooking according to package directions.
  3. Create the Tortilla Bowl: Preheat the oven to 375°F (190°C). Grease your baking dish and arrange tortillas to form a bowl, baking for about 10 minutes until crispy.
  4. Layer the Ingredients: Spoon mashed potatoes into the tortilla bowl, followed by the seasoned meat, and sprinkle with shredded cheese.
  5. Add Fresh Toppings: Top with diced tomatoes, shredded lettuce, jalapeños, diced avocado, and a swirl of sour cream or Greek yogurt.
  6. Garnish and Serve: Finish with fresh cilantro and lime wedges on the side for added zest.
