- 4 medium russet potatoes, diced
- 2 tbsp olive oil
- 1 tsp chili powder
- 1 tsp smoked paprika
- 1 tsp garlic powder
- ½ tsp ground cumin
- Salt & pepper to taste
- 1 lb ground beef or black beans
- 1 packet taco seasoning
- 1 cup shredded cheddar or Mexican blend cheese
- ½ cup sour cream or Greek yogurt
- ½ cup salsa
- ¼ cup sliced green onions
- ¼ cup chopped cilantro
- Optional toppings: diced tomatoes, corn, jalapeños, olives
Instructions
- Preheat the oven to 425°F (220°C).
- In a mixing bowl, toss the diced potatoes with olive oil, chili powder, smoked paprika, garlic powder, cumin, salt, and pepper.
- Spread the potatoes onto a baking sheet in a single layer and roast for 25–30 minutes, flipping halfway through.
- In a skillet over medium heat, brown the ground beef and stir in taco seasoning with a splash of water, letting it simmer.
- Once the potatoes are roasted, transfer to serving bowls, sprinkle cheese on top, allowing it to melt.
- Add your seasoned meat or beans, then layer on desired toppings, finishing with sour cream, salsa, and cilantro.
