Description

Crispy, seasoned potatoes layered with savory ground beef or hearty black beans, melty cheese, and fresh toppings create a delightful meal perfect for any occasion.


Ingredients

  • 4 medium russet potatoes, diced
  • 2 tbsp olive oil
  • 1 tsp chili powder
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • ½ tsp ground cumin
  • Salt & pepper to taste
  • 1 lb ground beef or black beans
  • 1 packet taco seasoning
  • 1 cup shredded cheddar or Mexican blend cheese
  • ½ cup sour cream or Greek yogurt
  • ½ cup salsa
  • ¼ cup sliced green onions
  • ¼ cup chopped cilantro
  • Optional toppings: diced tomatoes, corn, jalapeños, olives

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a mixing bowl, toss the diced potatoes with olive oil, chili powder, smoked paprika, garlic powder, cumin, salt, and pepper.
  3. Spread the potatoes onto a baking sheet in a single layer and roast for 25–30 minutes, flipping halfway through.
  4. In a skillet over medium heat, brown the ground beef and stir in taco seasoning with a splash of water, letting it simmer.
  5. Once the potatoes are roasted, transfer to serving bowls, sprinkle cheese on top, allowing it to melt.
  6. Add your seasoned meat or beans, then layer on desired toppings, finishing with sour cream, salsa, and cilantro.

Notes

Substitute ingredients based on preference, such as using sweet potatoes or different cheese varieties. Reheat individual portions in the oven for best results.
