Description

Ingredients

  • 1/2 cup almond butter or peanut butter
  • 1/4 cup maple syrup or honey
  • 2 tablespoons lemon juice
  • 1 tablespoon lemon zest
  • 1/4 cup poppy seeds
  • 1/2 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Combine ingredients: In a large bowl, mix together the rolled oats, almond butter, maple syrup, lemon juice, lemon zest, poppy seeds, vanilla extract, and a pinch of salt. Stir vigorously until every ingredient unites into a smooth, homogenous mixture.
  2. Shape the bites: Using your hands, scoop out portions of dough and roll them into small balls, approximately 1 inch in diameter.
  3. Chill on a baking sheet: Line a baking sheet with parchment paper and space your energy bites evenly.
  4. Firm up: Place the baking sheet in the refrigerator and let the bites chill for at least 30 minutes.
  5. Store for enjoyment: Transfer the chilled energy bites to an airtight container. They can be stored in the fridge for up to one week.
