Description
Deliciously bright and tangy lemon crumb bars with a buttery topping, perfect for any occasion.
Ingredients
Scale
- 1 1/2 cups all-purpose flour
- 1/2 cup unsalted butter, softened
- 1/2 cup sugar
- 1/4 teaspoon salt
- 1/2 cup lemon juice
- 1 cup powdered sugar
- 1 teaspoon lemon zest
- 1/2 teaspoon baking powder
- 2 large eggs
Instructions
- Preheat your oven to 350°F (175°C) and generously grease your 9×9 inch baking pan with butter or non-stick spray for easy removal.
- Combine the flour, softened butter, sugar, and salt in a large mixing bowl. Use your fingers or a pastry cutter to create a crumb mixture. Press half of this mixture firmly into the bottom of the prepared pan, forming a robust crust.
- Whisk together the lemon juice, powdered sugar, lemon zest, eggs, and baking powder in another bowl until you achieve a smooth and creamy texture. Pour this luscious lemon mixture over your crust, spreading it evenly.
- Crumble the remaining flour mixture over the top of the lemon layer, ensuring it coats evenly.
- Place your pan in the oven and bake for about 20-25 minutes, or until the top is lightly golden and the filling looks set.
- Allow the bars to cool completely in the pan. Carefully lift them out and slice them into squares or rectangles to serve.
Notes
These bars can be made a day in advance; their flavors deepen overnight. Feel free to customize with berries or lime.
