Description

Ingredients

  • 2 large eggs

Instructions

  1. Preheat your oven to 350°F (175°C) and generously grease your 9×9 inch baking pan with butter or non-stick spray for easy removal.
  2. Combine the flour, softened butter, sugar, and salt in a large mixing bowl. Use your fingers or a pastry cutter to create a crumb mixture. Press half of this mixture firmly into the bottom of the prepared pan, forming a robust crust.
  3. Whisk together the lemon juice, powdered sugar, lemon zest, eggs, and baking powder in another bowl until you achieve a smooth and creamy texture. Pour this luscious lemon mixture over your crust, spreading it evenly.
  4. Crumble the remaining flour mixture over the top of the lemon layer, ensuring it coats evenly.
  5. Place your pan in the oven and bake for about 20-25 minutes, or until the top is lightly golden and the filling looks set.
  6. Allow the bars to cool completely in the pan. Carefully lift them out and slice them into squares or rectangles to serve.
