Description
A comforting dish featuring tender beef, vibrant vegetables, and noodles simmered in a rich, savory broth.
Ingredients
Scale
- 1 lb beef, cut into strips
- 4 cups beef broth
- 2 cups noodles (e.g., ramen or udon)
- 1 cup carrots, sliced
- 1 cup bell peppers, sliced
- 1 onion, sliced
- 3 cloves garlic, minced
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 teaspoon ginger, grated
- Salt and pepper to taste
Instructions
- In your slow cooker, place the beef strips, beef broth, minced garlic, soy sauce, sesame oil, and grated ginger together. Stir to ensure the beef is nicely coated with the delicious marinade.
- Toss in the sliced onions, carrots, and bell peppers. These veggies will soften and infuse the dish with their sweetness.
- Sprinkle salt and pepper over the mixture. Remember, you can adjust these flavors later, so season sparingly at first.
- Cover your slow cooker and set it on low heat for 6-8 hours.
- Approximately 30 minutes before serving, follow the package instructions to cook your noodles. Drain them and let them sit, ready to absorb the rich broth.
- In generously sized bowls, place the cooked noodles and ladle the beef and vegetable mixture over the top.
- For extra richness, drizzle a bit of additional sesame oil over the top just before serving.
Notes
Make-ahead by preparing the ingredients the night before for even better flavor. Customize with your favorite vegetables or spices.
