Description

A delicious and healthy Keto Cranberry Orange Bread that is perfect for the holiday season or any time of the year.


Ingredients

  • 2 cups almond flour
  • 1/2 cup erythritol or preferred sweetener
  • 1/2 cup unsweetened cranberry sauce
  • 1/4 cup orange juice
  • 3 large eggs
  • 1/4 cup melted coconut oil
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp vanilla extract
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, mix together the almond flour, erythritol, baking powder, baking soda, and salt.
  3. In another bowl, whisk together the eggs, melted coconut oil, orange juice, and vanilla extract.
  4. Combine the wet ingredients with the dry ingredients and mix until well combined.
  5. Fold in the cranberry sauce and walnuts if using.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake for 45-50 minutes or until a toothpick inserted in the center comes out clean.
  8. Let the bread cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
