- 1 loaf focaccia bread (horizontally halved)
- 2 tablespoons pesto
- 2 tablespoons mayonnaise
- 1 tablespoon sun-dried tomatoes
- ½ lb sliced turkey
- 6 oz prosciutto
- ½ cup roasted red peppers
- 8 oz fresh mozzarella, sliced
- 2 tablespoons balsamic glaze
- ⅓ cup fresh basil leaves
- 2 cups arugula
Instructions
- Lay each half of the focaccia bread on a sturdy cutting board, cut side facing up.
- Blend the mayonnaise with the sun-dried tomatoes in a small food processor until creamy.
- Spread the mayo mixture generously over one half of the focaccia.
- Smear the other half of the focaccia with the vibrant pesto.
- Layer slices of turkey on one half, followed by prosciutto, roasted peppers, and mozzarella.
- Drizzle balsamic glaze over the cheese.
- Sprinkle fresh basil leaves and arugula over the top.
- Press the other half of the focaccia firmly on top.
- Slice the sandwich into quarters and serve.
