A decadent chocolate roll filled with creamy peanut butter and topped with luscious ganache, perfect for any celebration.

- 3/4 cup all-purpose flour
- 1/4 cup unsweetened cocoa powder
- 1 tsp baking powder
- 1/4 tsp salt
- 4 large eggs (at room temperature)
- 3/4 cup granulated sugar
- 2 tbsp vegetable oil
- 1 tsp vanilla extract
- 1/4 cup milk
- 3/4 cup creamy peanut butter
- 1/2 cup powdered sugar
- 1/2 cup heavy cream + 1 tsp vanilla extract
- 1 cup chopped peanut butter cups
- 1/2 cup heavy cream (for ganache)
- 3/4 cup semi-sweet chocolate chips
Instructions
- Preheat your oven to 350°F (175°C).
- Prepare your pan by lining a jelly roll pan with parchment paper.
- Whisk together the flour, cocoa powder, baking powder, and salt in a bowl.
- Beat the eggs and granulated sugar on high speed for 4-5 minutes until thick and pale.
- Add in the vegetable oil, milk, and vanilla extract, mixing until combined.
- Combine the dry ingredients into the wet mixture gently.
- Spread the batter evenly in the prepared pan and bake for 10-12 minutes.
- Roll the cake as soon as it’s out of the oven, using a kitchen towel dusted with powdered sugar.
- Prepare the filling by beating the peanut butter and powdered sugar until smooth, then folding in the heavy cream and chopped peanut butter cups.
- Unroll the cooled cake and spread the filling evenly before re-rolling it seam-side down.
- Make the ganache by heating the heavy cream and pouring it over the chocolate chips, stirring until smooth.
- Finish with ganache before chilling to set.
- Slice and serve, optionally garnished with extra peanut butter cups.
Notes
This roll can be made ahead of time and is best enjoyed chilled. Customize the filling as desired.
