Description

Juicy chicken thighs marinated in a sweet and spicy honey lime mixture, perfect for summer grilling.


Ingredients

  • 2 lb chicken thighs (boneless and skinless)
  • 1/3 cup honey (preferably local)
  • 1/4 cup lime juice (freshly squeezed)
  • 2 tbsp chili powder
  • 4 cloves garlic (minced)
  • 2 tbsp olive oil
  • 1 tsp salt (use kosher if possible)
  • 1/4 cup cilantro (chopped, optional)

Instructions

  1. Prepare the Marinade: In a large mixing bowl, whisk together honey, lime juice, chili powder, minced garlic, olive oil, and kosher salt.
  2. Marinate the Chicken: Add the chicken thighs to the marinade, ensuring each piece is thoroughly coated. Cover the bowl and refrigerate for at least 1 hour, or ideally overnight.
  3. Preheat the Grill: About 15 minutes before cooking, ignite your grill to medium-high heat, ensuring the grates are clean and oiled.
  4. Cook the Chicken: Remove the chicken from the marinade and let any excess drip off. Place on the grill, cooking for about 6-7 minutes on each side until charred and the internal temperature reaches 165°F.
  5. Glaze the Chicken: During the last minute of cooking, brush the remaining marinade onto the chicken.
  6. Rest the Chicken: Once cooked, take the chicken off the grill and let it rest for about 5 minutes.
  7. Garnish and Serve: Sprinkle chopped cilantro on top and serve with lime wedges.

Notes

Marinating the chicken overnight enhances flavor. If grilling isn’t an option, you can air fry or bake the chicken at 425°F.
