Description

A rich chocolate cake layered with fresh strawberries and enveloped in a glossy chocolate shell, perfect for celebrations or a delightful treat.


Ingredients

  • 2 cups Granulated Sugar
  • 3/4 cup Unsweetened Cocoa Powder
  • 1 tablespoon Baking Powder
  • 1 teaspoon Baking Soda
  • 1 teaspoon Salt
  • 1 cup Buttermilk
  • 1/2 cup Vegetable Oil
  • 2 large Eggs
  • 2 teaspoons Vanilla Extract
  • 1 cup Boiling Water
  • 2 cups Fresh Strawberries
  • 1 tablespoon Lemon Juice
  • 8 ounces Dark Chocolate
  • 2 tablespoons Coconut Oil

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans with coconut oil.
  2. Mix the dry ingredients: In a large mixing bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt until well combined.
  3. Combine the wet ingredients: In a separate bowl, mix the buttermilk, oil, eggs, and vanilla extract. Pour the wet mixture into the dry ingredients. Mix until just combined; it’s okay if it’s slightly lumpy.
  4. Add boiling water: Slowly add the boiling water to the batter, stirring steadily until smooth and glossy.
  5. Bake the cakes: Divide the batter evenly between the pans and bake for 30-35 minutes. A toothpick inserted in the center should come out clean. Cool in the pans for 10 minutes before transferring to a cooling rack.
  6. Prepare the strawberries: Slice the strawberries and toss them with lemon juice.
  7. Make the chocolate shell: In a double boiler or microwave, melt the dark chocolate and coconut oil until smooth.
  8. Layer your cake: Place one layer on a platter, spread strawberries over the top, and cover with some chocolate ganache. Place the second layer on top and repeat.
  9. Final touch: Pour the remaining ganache over the top, letting it drip down the sides and decorate with more strawberries.

Notes

Make cakes a day in advance and wait to add strawberries and chocolate until shortly before serving. Experiment with different berries or add crushed nuts between layers.
